Increasing more plants in our diet is a bit challenging. But, this cookie recipe will make picky eaters want some more. No one will ever notice that these cookies are made of beans and oats.

How to Make Chickpea Cookies

To get the perfect texture for the base of this dessert is to mash the chickpeas until it is smooth. You can mash the chickpeas by using a fork or blending the chickpeas into a food processor. The goal is to make the chickpeas really smooth.  

This recipe uses oats instead of flour. You can use oat flour or you can grind Quaker Oats in a blender to have oat flour.

After mashing the chickpeas, add in other ingredients except for the chocolate chips cookies. Mix the chocolate chips lastly by hand.

Chickpea Chocolate Chip Cookies

This cookie recipe will make picky eaters want some more beans and oats.

Ingredients
  

  • 1 can 15.5 oz Garbanzo beans or chick peas, drain. The liquid called "aquafaba" can be saved to make nondairy whipped cream.
  • 2 Tbsp coconut oil
  • 1/2 cup brown sugar
  • 3/4 cup oat flour (you can grind regular oats in a blender)
  • 1 tsp apple cider vinegar
  • 1/2 tsp baking powder
  • 1/4 tsp salt (omit if you are using canned chickpeas)
  • 1 tsp vanilla extract
  • 3/4 cup chocolate chips

Method
 

  1. Pre-heat oven to 350 °F degrees.
  2. Lightly oil a cookie sheet and line with parchment paper.
  3. Mash the Garbanzo beans or chickpeas. You can use fork or a food processor. Blend it until very smooth.
  4. Add in all other ingredients except chocolate chips.
  5. Mix in chocolate chips by hand.
  6. Drop the mixture by heaping teaspoons onto the prepared cookie sheet.
  7. Bake for about 18-20 minutes or until the bottom is golden.
  8. Set aside to cool.
  9. You can sprinkle some confectioner's sugar on top.
  10. Serve and enjoy!
