Bibingka Muffins

Bibingka refers to a type of rice cake, a dessert that is popular in the Philippines. It is a type of cake that is made from sweetened glutinous rice flour cooked in coconut milk mixture topped with layer of sliced salted eggs. It is usually cooked with banana leaf-lined clay bibingka molds but we will bake it on the oven. If you have banana leaves, you may line the muffin tin with the leaves to give the cake a nice banana leaf scent. However, if banana leaves are not available, any muffin liners can be used.
The rice flour dough can be filled with variety of fruits such as coconut strips. You’ll also find it topped with sliced salted eggs, and cheese. You can be creative as you wish.
Bibingka is usually served as snack or breakfast. It can be served hot or cold with drinks such as coffee or tea.

Method
- Pre-heat oven at 350 °F. Grease muffin pan or line with muffin liner.
- Combine Bibingka Mix, water, sugar, eggs, and oil in a bowl until well blended.
- Pour batter into prepared pans.
- Bake for 12 minutes or until done.
- If desired, you can brush the surface with nondairy butter, top it with grated coconut, or broil it for 2 minutes to have a golden surface.
