Bibingka Bites

Bibingka is a traditional Philippine dish that is made from sweet rice flour dough.

Ingredients
  

  • 1 pack White King Bibingka Mix
  • 3 pcs medium-sized eggs
  • 1 c water or nondairy milk
  • 4 T coconut oil or olive oil

Method
 

  1. Pre-heat oven at 350 °F. Grease muffin pan or line with muffin liner.
  2. Combine Bibingka Mix, water, sugar, eggs, and oil in a bowl until well blended.
  3. Pour batter into prepared pans.
  4. Bake for 12 minutes or until done.
  5. If desired, you can brush the surface with nondairy butter, top it with grated coconut, or broil it for 2 minutes to have a golden surface.
