Easy Cassava Cake

Cassava Cake is a traditional dessert in the Philippines. It is made with cassava, a starchy root vegetable. The cake is often served at celebrations and festivals.
The cassava is usually grated by hand but since this recipe is an easy one, we will use a blender to blend the cassava with other ingredients to make the batter. We start by cutting the cassava into small pieces just to easily blend the cassava in the blender. Then, we add the rest of the ingredients. We then blend everything and pour the batter into a pan or a muffin pan. Bake and serve.
However, using grated cassava has a different texture from blended cassava so if you have time and energy to grate the cassava, it is recommended. Grated cassava has more body to it while blended cassava has a gummy texture like mochi.

- Grate cassava.
- Combine grated cassava, sugar, coconut milk, vanilla extract, and pinch of salt.
- Prepare a pan with parchment paper.
- Pour batter on the prepared pan.
- Lightly cover the pan with foil.
- Bake at 350 F for 45 minutes.
- After 45 minutes or when the top is firm to touch, uncover and continue to bake for 2-3 minutes more to have a golden top.
- Prepare a muffin pan by lining it with muffin liners.
- Pour batter into the prepared muffin pan. Lightly cover with foil.
- Bake at 350 F for 18 minutes.
- After 20 minutes or when the top is firm to touch, uncover and continue to bake for 2 minutes to have a golden top.
