Method
- Warm the nondairy milk for about a minute in a microwave. It should be like how the warm water would feel like in your warm shower.
- Add the yeast and sugar. Set aside for about 5-10 minutes. Yeast is activated when bubbles are formed.
- Mix the bread flour, glutinous rice flour, salt, baking powder, and olive oil in a separate bowl. An electric mixer can be used to mix the ingredients. Set aside and let the dough rise for about an hour.
- When the dough has doubled in size or after an hour. Knead the dough on a lightly floured surface and divide it into 16 equal parts.
- Roll them into a log of about one foot. Fold it in half and twist. Pinch the end gently to close.
- Set aside to rise one more time.
- When the dough has doubled in size or for about 30 minutes, heat a frying pan on medium heat.
- Add coconut oil up to a level of an inch or more. Fry the doughnuts for about a minute or until it changes its color to golden brown.
- Flip and cook for another minute or so. This dough cooks fast so make sure you don't cook it too long so it won't get burned. Transfer the dough to a cooling rack or a plate with a paper towel.
- Sprinkle or roll it in cinnamon sugar.
- Serve and enjoy!
