Easy Nondairy Chicken and Pineapple Pizza

This delicious pizza features sweet and juicy pineapple chunks, juicy chicken pieces, and a crispy and chewy crust. The combination of these flavors is simply out of this world!

Ingredients
  

Pizza Sauce
  • 1 c tomato sauce (nondairy Marinara sauce)
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley
  • 1/4 tsp oregano
  • 1 tbsp sugar
Pizza Toppings
  • 1/2 lb diced chicken
  • 1 c sliced pineapple
  • 1 package of Daiya nondairy Mozzarella cheese shreds
Pizza Dough
  • 1 c warm water
  • 2 tsp yeast
  • 3 c all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp olive oil

Method
 

  1. Activate the yeast: Using warm water, the temperature you would have in the shower, add the yeast, mix and set aside for about 10 minutes or until bubbles are formed.
  2. Knead: In a bowl, add flour, sugar, salt, oil, and the yeast mixture. Knead by hand or with a mixer.
  3. Rise: Place the dough into a greased mixing bowl, cover and set aside to rise for about an hour or until the dough doubled in size.
  4. Knead and Shape: Punch the dough to release air bubbles and knead for about 5 minutes. Divide the dough into 2. Roll the dough out into a 12-inch circle. Cover and rest for another 30 minutes while prepping the pizza toppings.
  5. Sprinkle Toppings: Top pizza with the cooked pizza sauce, add chicken, pineapple chunks, and Daiya Mozzarella cheese shreds. You may add your favorite toppings of your choice.
  6. Bake: Bake pizza in a preheated oven at 400 °F for about 12-15 minutes until the crust is golden brown.
  7. Slice the pizza. Serve and enjoy!
Chicken Toppings
  1. Cut and marinate the chicken: Dice the chicken. Sprinkle salt and pepper. Set aside.
  2. Pan-fry the chicken: On medium heat, add frying oil and heat it for about 2 minutes. Add the marinated chicken. Cook for about 5 minutes or until golden brown. Set aside.
Pizza Sauce
  1. In a low-heat pan, add tomato sauce, garlic powder, parsley, oregano, and sugar.
