In a bowl, add 1 tsp vanilla extract (optional, but adds lovely flavor).
Add 2 Tbsp sugar.
Add 1 Tbsp coconut oil or olive oil.
Add 1 cup of nondairy milk.
In a separate bowl, combine 1 cup flour, 1 tsp baking powder,1/4 tsp salt. Combine the wet and dry ingredients until fully incorporated. Gently stir until just combined — a few small lumps are perfectly fine. Overmixing can make the pancakes dense.
Preheat a non-stick pan and warm it over medium heat.
Pour about ⅓ cup batter onto the pan for each pancake.
When bubbles are formed, flip the pancake and let it cook for about 30 seconds.
Repeat for the rest of the batter.
Serve and enjoy! Stack your pancakes high and serve with your favorite toppings - maple syrup, fresh berries, sliced bananas, or a pat of vegan butter. And, sprinkle some powdered sugar on top to brighten up your pancakes.
