Method
- Pre-heat oven to 350 °F.
- In a blender, blend egg, oil, and fresh mint leaves until leaves are blended. Set aside.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Add in the blended ingredients.
- Add the nondairy milk.
- Fold in chocolate chips.
- Line standard size muffin tins with paper liners.
- Spoon the batter into prepared muffin cups, filling half full.
- Bake for 15 minutes or until wooden pick inserted in center comes out clean.
- Cool on wire rack.
- Serve and enjoy!
