Method
- Warm the non dairy milk for about a minute in a microwave. It should be like how the warm water would feel like in your warm shower.
- Add the yeast and sugar. Set aside for about 5-10 minutes or when you see bubbles as it indicates that the yeast is activated.
- In a bowl, mix the bread flour, glutinous rice flour, salt, baking powder and olive oil. Set aside and let the dough rise for about an hour.
- When the dough has doubled in size or after an hour. Knead the dough in a lightly floured surface and divide it into 16 equal parts.
- Prepare a tray covered with a parchment paper or lightly floured.
- Roll the dough into a ball and flatten it out with a rolling pin. Punch a hole with a circle cookie cutter or with a bottle cap. Now you'll have a doughnut with a hole in the middle. Transfer the dough in the prepared tray. Set aside the small circle dough you made for munchkins or combine it with the other and shapre it for more doughnuts.
- Set aside to rise one more time for about another half hour or until the dough have doubled in size.
- Heat a frying pan in medium heat.
- Add coconut oil up to a level of an inch or more.
- When the oil is hot enough or when it bubbles when sticking a wooden spoon in it, fry the doughnuts for about a minute or until it changes its color to golden brown.
- Flip and cook for another minute or so. This dough cooks really fast so make sure you don't cook it too long so it won't get burned.
- Transfer the dough to a cooling rack or a plate with a paper towel. Let it cool down.
- Glaze the dough by dipping it on the glaze or pour the glaze on top. You can glaze twice. Add sprinkles!

- Combine the confectioner's sugar and coconut oil. Thin out with almond milk or hot water when needed.
