Lime Chicken

Bright, zesty, and full of flavor, this Lime Chicken recipe is the perfect balance of tangy citrus and savory seasoning. Juicy, tender chicken breasts are marinated with fresh lime juice, garlic, and spices, then pan-seared or grilled to golden perfection. Ingredients
  

  • 4 boneless skinless chicken breasts (about 1 pound)
  • 1/3 cup lime juice
  • 2 tsp grated lime peel
  • 3 cloves garlic, minced
  • 1/4 cup onion, finely chopped
  • 1 Tbsp brown sugar
  • 1/2 tsp salt
  • 1 tsp ground black pepper
  • 2 Tbsp oil (coconut, olive, avocado)

Method
 

  1. Marinate the Chicken
    In a bowl, whisk together lime juice, lime peel, garlic, onion, brown sugar, salt, pepper, and oil. Add the chicken and coat well. Cover and let it marinate for at least 30 minutes (refrigerate up to 2 hours or overnight for more flavor).
  2. Cook the Chicken
    Remove the chicken from the marinade; use the marinade for basting.
    Heat a skillet or grill pan over medium-high heat. Cook the chicken for 5–7 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F / 74°C).
    Or, in a grill, grill covered over medium heat, for 15 to 20 minutes, or until the chicken is cooked through (165°F) and no longer pink in the center.
  3. Rest and Serve
    Remove from heat and let the chicken rest for 5 minutes to keep it juicy. Garnish with fresh cilantro or green onions before serving.
  4. Serve hot with your favorite vegetables. Enjoy!
