Piaya

Unleavened Bread with a sweet twist

Ingredients
  

  • 4 c all purpose flour
  • 1/2 tsp salt
  • 1 1/2 c water
  • 1/4 c coconut oil or olive oil
Sugar Filling
  • 2 c coconut sugar or brown sugar
  • 1 c All purpose flour
  • 1 c cornstarch
  • 1/2 c water

Method
 

  1. In a large bowl, combine flour, salt, oil, and water. Mix ingredients while slowly adding the water.
  2. Knead the dough for about 5 minutes.
  3. Cover with a cling wrap to rest for about 30 minutes.
Sugar Filling
  1. In a bowl, combine flour, cornstarch, sugar, and water.
  2. In a lightly floured clingwrap, pour the filling and cut it into equal parts.
  3. Roll it into a ball, about an inch and half-size ball.
To assemble Piaya Unleavened Bread
  1. On a lightly floured surface, knead the dough lightly and roll it into a log.
  2. Cut the dough into desired equal parts and roll it into about an inch and a half-size ball.
  3. With a rolling pin, flatten the dough ball and add a ball of the sugar filling.
  4. Wrap the sugar filling with the flattened dough.
  5. Using the rolling pin, flatten the dough with the sugar filling.
Cooking the Piaya Unleavened Bread
  1. Preheat a skillet to the low-medium setting.
  2. Cook the bread until it turns golden brown for about 2 minutes. Flip and cook the other side.
  3. Cook until all the bread are done.
  4. Serve and enjoy!
