Vegetable Leftover Fried Rice

Vegetable Fried Rice

Ingredients
  

  • 1 Tbsp cooking oil
  • 3-4 cloves of garlic, minced
  • half of medium onion, sliced
  • 1 pack of frozen vegetables of carrots, green peas, green beans and bell peppers. Or you can dice these vegetables yourself.
  • 4 c leftover rice
  • 1 Tbsp vinegar or lemon juice
  • Salt and Pepper

Method
 

  1. Heat a pan over low heat. Add oil.
  2. Saute garlic, then onion.
  3. Add the vegetables.
  4. Adjust heat to medium. When the vegetables are almost cook or became soften, then add the leftover rice.
  5. Continue to cook and mix the vegetables and the rice.
  6. Add vinegar and cook for about another minute.
  7. Add salt and pepper to taste.
  8. Pour into a serving plate.
  9. Share and enjoy!
